Congratulations to Kelsey and Brandon! Welcome Baby Ryleigh


I saw this gift wrap idea on Pinterest. They look like a little box of cupcakes. I bought a 3 pack of onesies and a bag of baby socks..You lay out the onesie and add a pair of socks to fold and roll into a cupcake shape, secure with scotch tape. I added a cupcake collar so they would sit in the little pastry box. Next I tied on a pink curly ribbon. In addition to the boxes, I purchased clear cupcake bags with ties. That was the wrap for the extra socks.This will soon be ready to mail...I have a couple more things to add to the shipping package.

Sweet Potato Hashbrowns, Bacon, Eggs, Buttered Toast



This was a really good breakfast! I peeled the sweet potato and shredded it for hash browns. I cooked the potato in some of the fat from the bacon grease, covered in onion powder, pepper and garlic salt. The toast was buttered oat bread.

Shepherd's Pie


I used a non stick skillet to prepare the Shepherd's Pie. I sauteed onion and carrot first, in olive oil. Next I browned 1 1/4 lb of ground round, added 1c. of crushed tomatoes, diced mushrooms, fresh broccoli & frozen corn. Spices were: onion powder, oregano, garlic, parsley, salt & pepper. It is topped with leftover mashed potatoes, topped with cheese. Put in a 375 degree oven for 10 to 15 minutes.

Meatloaf, Mashed Potatoes, Cauliflower & Garlic Bread


For the meatloaf, I used ground round and William's Sausage, extra sage, Oat Bread toasted and torn in little pieces, onion diced fine, 2 eggs, BBQ sauce, oregano, cumin, pepper, onion powder, thyme and garlic salt, were added to the meat. Combine ingredients, shape and bake in a cast iron skillet at 350 for an hour and a half. Uncover the last 15 minutes and top with more BBQ sauce and turn the oven temp up slightly.
The potatoes were mashed with butter, cream cheese, whole milk, salt and pepper.

Scrambled Eggs with veggies and French Bread


Bacon Biscuits & Eggs


The drop biscuits had mozzarella cheese and bacon in the center. Start by cooking the bacon, drain on paper towel and set aside. Mix biscuit dough, add cheese, drop the bottom half of the biscuit on a cookie sheet, top with bacon and then more biscuit dough. Bake at 375 for 10 to 12 min. Serve with dippy eggs.

Pineapple Cake with Cream Cheese Icing

Pineapple Cake Recipe Found
Hello! Nice site and blog! I think I may have a recipe that someone named Bernice was looking for on your recipe detective blog. She called it “pineapple cake” with cream cheese frosting. I call mine “best cake.” Here it is:

2 cups flour
2 cups sugar
2 tsp baking soda
2 eggs
1 tsp vanilla
2 cups chopped nuts
1 20-oz. can crushed pineapple, undrained
Combine all ingredients and mix by hand. Pour into greased 9 x 13 pan. Bake 35 minutes at 350 degrees. Let cool and frost with this:
8 oz. cream cheese, softened
½ cup soft margarine (I use butter)
1 tsp vanilla
1 and 1/3 cup confectioners’ sugar



Chicken Potpie


I used Pillsbury for the crust. For the filling, I softened onion and carrot in olive oil. I cooked chicken tenders, diced potatoes and Shoe-peg corn in chicken stock. Combined the two and added a can of Campbell's cream of mushroom soup. Garlic and pepper were added. It was baked in a 400 degree oven for 30 minutes.
