Fried Potatoes

I peel, cut, rinse and then put potatoes in a tea towel to drain. Peanut Oil is heated in a cast iron skillet, potatoes cooked in oil alone until they begin to brown, then add onion and finish cooking.. Drain on paper towel, salt and pepper.
