Chicken Enchilladas, Beans & Rice


This was so Good! I cooked the chicken in 2 cans of diced tomatoes with chiles, onion, garlic, oregano & crushed red pepper, in the crock-pot for 5 hrs on high. I got the tortillas at Tortilleria, since they are made fresh there, I think it makes a lot of difference. Next I made the sauce using; 2 T. flour, 3 T. chilli powder, 1 t. cocoa, 1/2 t. garlic salt + 3 cups of water .. Combine ingredients stirring in a saucepan until it begins to thicken. Add 8oz of tomato sauce.
Next I dipped each tortilla in warm olive oil, put a little sauce, chicken shredded and cheese on each, rolled and placed seam side down in a cast iron skillet. After filling the skillet, I topped it with some more of the chicken, tomatoes and cheese. Placed it in a 350 degree oven and baked for 15 minutes.

Rainbow Chard, Onion, Mushrooms, maple sausage & Parmesan over Rice


This was really tasty. I softened the veggies in olive oil and then added the cooked sausage, shaved Parmesan for the top, added salt and pepper. Very simple and good for lunch.

Spinach,Pomegranate, Greek Yogurt Dressing with Almonds & Beef, Bean, Cabbage Soup


To make creamy and tangy dressing for this spinach salad, I mixed together, 2 T. of mayo, 3 T. of Greek yogurt, diced onion, fresh parsley, lemon juice, garlic salt, and pepper. The sweet pomegranate on top of this was delicious. The slivered almonds are a nice finish.

My sister and I were on the phone discussing food and she asked if I remembered the soup, Ron, use to make?  She said it was roast, beans and sauerkraut. I thought about making it and changed at the last minute and put fresh cabbage in it. I also decided on small red kidney beans. It smells wonderful as it cooks. The other ingredients were beef stock, shallot, onion, garlic, red pepper, black pepper & Worcestershire  sauce.

Swai Filets, Red Kale, Caramelized Onion, Garlic, Balsamic Vinegar, Salt & Pepper


Stephan and I decided on fish for dinner. The Swai filets were poached in foil packets on a bed of sauteed onion, olive oil, seasonings and lemon slices on top. They were cooked at 350 degrees for 30 minutes. The kale was prepared with caramelized onion, garlic, Balsamic vinegar, salt & pepper.

Anasazi Beans and Cornbread


I was looking for another type of bean when I ran across these, at the store. I soaked the beans first, drained the water and then covered with fresh. I added chopped shallot, sliced baby carrots, garlic, thyme, and hickory bacon chopped., salt and pepper.
The cornbread was a recipe that I changed slightly, adding greek yougurt and shoepeg corn. I always cook my cornbread in cast iron. I love it that way!

Vegetable Beef Soup in the Crockpot


I have lots of vegetables in the crock-pot and a roast in the oven. I am going to add beef to the soup after it has cooked in the oven for a couple of hours, I will post more pictures when it is finished.
The vegetables were squash, onion, carrot, potato, cabbage, green beans, peas, shoe peg corn, a can of crushed tomatoes, garlic, parsley, chicken stock, pepper, oregano, basil & thyme.

Breakfast with Mom on Lindsey's day off


I cooked eggs over medium, onions in red & yellow fried potatoes. sausage gravy over whole wheat bread, pancakes (not pictured), bacon & Coffee. It was a great breakfast with both Lindsey Lou & Stephan.

Crab & Shrimp Dip - Crab Cakes


The top photo is Dip, prepared with butter, onion, celery, cream cheese, Parmesan, garlic, lemon, Crab, Shrimp, milk and a Cajun Spice blend.

The Crab Cakes were a blend of Crab meat, green onion, mayo, egg, crushed Ritz crackers & seasoning.
