Roasted Vegetables



The mix of vegetables were bok choy, red onion, zuchinni, carrots, red pepper. Herbs were fresh flat leaf parsley, basil, dried rosemary and garlic. Drizzle coconut oil and roast at 375 for about 25 min. When it comes out of the oven shave parmesan over the top salt and pepper.
