Pork with mushroom gravy, sweetpotatoes with butter and sage, arugula, fennel, pears with a curry vinaigrette. French Bread with Bruschetta

  1. The sweet potatoes were steamed, then peeled and mashed with Melted butter, fresh sage, garlic, milk, salt and pepper.
    The curry vinaigrette is from one of Giada's salads.
    The pork was put in seasoned flour, then egg, then panko bread crumbs and Parmesan cheese. Fried in coconut oil. Then mushrooms.
    I made a roux and added the mushrooms and served gravy over the meat.
