Eggs, Polenta, Bacon & Tomatoes




I cooked the maple bacon in a non stick skillet, removed to drain on paper towel. Drain the bacon grease and cook the polenta in the same pan. When it is finished cooking add 2 T butter and grated parmesan. Make a dent with the back of a spoon and add eggs. Cover with bacon, then a lid and cook approximately 10 more minutes. Salt and pepper.
