Eggplant grilled topped with Parmesan & Garlic Bread


Angelo cooked lunch for us on the grill. It was delicious.. I prefer this to fried eggplant. After he seasoned then grilled the eggplant, he put it on a baking sheet, topped slices with bread crumbs, more spice, olive oil and Parmesan. It baked for just a few more minutes. Yum!
