The Polenta had butter and Parmesan Cheese in it. The Kale was wilted in the cast iron skillet with olive oil, then salt and pepper were added. For the fish coating I used corn meal, cake flour, onion powder, garlic powder, red pepper, salt and pepper. I dredged the fish in flour, then egg, then the cornmeal, flour, spice mix and fried it in peanut oil.
