Rigatoni & Penne with Red Sauce


I put a whole head of garlic and red onion in olive oil in cast iron to soften. I then used a 28 oz can of diced tomatoes. I cooked some sausage in another skillet and combined all, adding more seasoning at the end of cooking. I also added some water, then simmered to reduce. I used 2 kinds of pasta and 2 kinds of cheese, Parmesan & Pecorino.

Cherry Cobbler & Blue Bell Vanilla Ice Cream


One more Cherry Cobbler! This one is the best so far. The recipe is:
                                                          
                                                       Cherry Cobbler

                                           2 c of homemade bisquick
                                           2 T. of sugar
                                           1/2 c. of milk
                                           1/2 t. of salt
                                           3 T. of melted butter

Combine ingredients and drop dumplings in a casserole dish with fresh cherries, thickened with cornstarch. I add both sugar and lemon juice to the cherries. Bake at 400 degrees for about 20 minutes. I sprinkled additional sugar and salt on top before baking.

Potato Cake, Eggs, French Bread & Tomato


The potato cakes were leftover mashed potatoes with diced onion (small dice), garlic powder, one egg, 1/2 and 1/2 and seasoned flour.  Combine ingredients - potatoes should be thick. Roll a small amount in seasoned flour, then flatten in the skillet. Cast Iron should be hot using peanut oil. Add butter to brown potato cakes.
