Eggs, Toast & Tomato
I cooked onion, bacon, then added, asparagus, artichokes, salt & pepper to eggs. After eggs set, I melted mozzarella cheese on them.

Pizza Bread
I sauteed shallots in olive oil. This was the first layer for the french bread, next Campri tomatoes, chopped bacon, onions, fresh basil, mozzarella cheese. oregano, salt & pepper. I put it in a convection oven at 400 degrees until it was browned and cheese melted. About 8 min.

Roasted Cauliflower Soup & Cornbread
For the soup I roasted a head of cauliflower, drizzled with olive oil, salt & pepper, for about 40 min. In a large pot, add chicken broth, onion, celery seed, potato, frozen corn, bay leaf, paprika and fresh parsley. Add the roasted cauliflower and cook until everything is tender and liquid has reduced. Serve in soup bowl, adding 1/2 & 1/2 to cool and make the soup creamy.
Cornbread was good! I used pancake mix, cornmeal, sour cream, creamed corn and olive oil. It was tender, sweet and salty, light and pretty darn tasty.

Pan Fried Cod
I first dipped the fish in egg and milk, then flour, crackers crushed, red pepper, dried thyme, salt and pepper. I used peanut oil to pan fry the cod, in my cast iron skillet. I made the tartar sauce with Hellman's mayo, lemon, capers, dill relish, salt & pepper.
Salad & Garlic toast for lunch
These little tomatoes are so sweet and great with the mozzarella and Thai basil. Garlic toast was quick in a cast iron skillet. This was fantastic fast food.

Salad for Supper
This is a mix of greens with Thai basil, cherry tomatoes, fresh Mozzarella, bacon, garlic bread cubes & apple cider vinegar dressing. It was delicious!

My Favorite Chocolate Chip Cookie
1/2 Cup of butter
1/2 cup of crisco
1 1/2 c. of brown sugar
3/4 t. of salt
1 egg
1 t vanilla
2 cups of all purpose flour
1 t. baking soda
1c. of pecans
12 oz of chocolate chips
combine in order listed, scoop by tablespoon onto a greased cookie sheet. Bake at 325 in a convection oven for 9 min.

Taco's
I put ground chuck on one side of the corn tortilla, then placed it in hot peanut oil As soon as the shell softened enough to fold I flip from one side to the other until the shell is brown and beef is cooked . Drain on paper towel, top with onion, lettuce and cilantro. I severed black beans and mexican rice, for the sides.

Cheeseburger, Fresh Green Beans, Cream Cheese Potatoes
I grilled fresh ground chuck for burgers, on Matzah bread. Fresh green beans were cooked in chicken stock, onion and pepper. I cooked maple bacon in a separate skillet before adding to the beans. I also added fresh garlic cloves. The potatoes were sliced and boiled until soft. Drain water, then add potatoes & sweet peppers to a 9 by 13 buttered casserole. Prepare bechamel sauce to pour over potatoes. Add cream cheese, sharp white cheese, onion powder, paprika, pepper and chicken base. Bake in a 350 oven until heated through. approximately 40 min.
