Chocolate Cupcakes with Chocolate Mint Icing and Crushed Candy
I used a cake mix for these cupcakes. I then melted Ghiradelli Chocolate Chips in a double boiler and added a teaspoon of peppermint extract. I crushed the little round soft "candy cane" candy to put on top of the cupcakes after they were dipped in the Chocolate Mint.

Beef Vegetable Soup
I used tri tip for the beef in this soup. It was very tender and was a good choice for soup.
Season meat and then brown in a small amount of peanut oil. Add vegetable stock and simmer for an hour. Next add onion, carrot, celery, fennel, potatoes, one can of crushed tomatoes, bay leaf, onion powder, salt and pepper.

Biscuit & Gravy, Bacon, Egg and Fried Potato
I cooked the maple bacon in my iron skillet, poured off some of the fat, then sprinkled a couple tablespoons of flour and incorporated with the rest of the drippings left in the skillet. I then added some chicken stock and continued stirring to prevent lumps. I added half and half at last. salt and pepper
Waldorf Astoria Red Velvet Cake
- Time 35 minutes
- Serves 12
Ingredients
- CAKE:
- 1/2 cup shortening
- 1 1/2 cups sugar
- 2 eggs
- 2 ounces red food coloring
- 2 tablespoons cocoa (heaping)
- 1 cup buttermilk
- 2 1/4 cups cake flour
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 teaspoon vinegar
- ****
- FROSTING:
- 3 tablespoons flour
- 1 cup milk
- 1 cup sugar
- 1 teaspoon vanilla
- 1 cup butter (must be butter!)
How to make it
- For Cake:
- Cream shortening, sugar and eggs.
- Make a paste of food coloring and cocoa. Add to creamed mixture.
- Add buttermilk alternating with flour and salt.
- Add vanilla.
- Add soda to vinegar (it foams!), and blend into cake batter.
- Pour into 3 or 4 greased and floured 8" cake pans.
- Bake at 350 F. for 24-30 minutes.
- Frost with the following frosting.
- ****
- For Frosting:
- Add milk to flour slowly, avoiding lumps.
- Cook flour and milk until very thick, stirring constantly.
- **COOL IT COMPLETELY!!
- Cream sugar, butter and vanilla until fluffy. Add to cooked mixture.
- Beat, high speed, until very fluffy. Looks and tastes like whipped cream.

Asparagus, Mushrooms, Smoked Cheddar, Chicken and grilled tortilla
I washed then cut up the vegetables. Poured on some olive oil and sprinkled rosemary garlic seasoning and roasted the veg at 400 degrees for about 20 min. I assembled the diced ingredients and grilled in a cast iron skillet.

This is an Emeril Lagasse recipe from food network. I made two changes, one was Greek Yogurt in place of sour cream. Instead of brown sugar, I added molasses to white sugar. |
