Breakfast Burrito


I made egg, bacon, onion, cheese, potato burritos today. I love the new dicing tool! It made preparation a snap.  I used Pepper & Salt, Emeril's  Essessence as the seasoning. I sliced the potatoes and fried them in hot oil until slightly browned, I placed potatoes on a paper towel lined plate to absorb the excess oil. I then put the potatoes and sliced onion on a cookie sheet and finished in a 375 degree oven. I cooked the eggs in a nonstick skillet until they were a soft scramble, added the cooked bacon and shredded cheese. I put all the ingredients in a Jalapeno Cheddar Tortilla and back in the skillet to crisp the outside.
