Biscuit filled with Ham & Cheese topped with an Egg
I left frozen biscuits in the refrigerator overnight. Use one biscuit portion and stretch and shape with fingers to make a little indention for the chopped meat and cheese. Place another biscuit on top and pinch edges together. Make a couple of slits in the dough and cook on low (#3 on my stove) in a covered, stainless steel skillet on top of the stove. I lightly greased the skillet with coconut oil. It took 5 minutes on each side to bake all the way through. A dippy egg for the top is a good finish for this biscuit.

Congratulations to Kelsey and Brandon! Welcome Baby Ryleigh
I saw this gift wrap idea on Pinterest. They look like a little box of cupcakes. I bought a 3 pack of onesies and a bag of baby socks..You lay out the onesie and add a pair of socks to fold and roll into a cupcake shape, secure with scotch tape. I added a cupcake collar so they would sit in the little pastry box. Next I tied on a pink curly ribbon. In addition to the boxes, I purchased clear cupcake bags with ties. That was the wrap for the extra socks.This will soon be ready to mail...I have a couple more things to add to the shipping package.

Happy Valentine's Day
Valentine's dinner was at Tortilleria Perches. It was excellent, as always. We had an Amber Dos Equis to drink with dinner.

Sweet Potato Hashbrowns, Bacon, Eggs, Buttered Toast
This was a really good breakfast! I peeled the sweet potato and shredded it for hash browns. I cooked the potato in some of the fat from the bacon grease, covered in onion powder, pepper and garlic salt. The toast was buttered oat bread.

Shepherd's Pie
I used a non stick skillet to prepare the Shepherd's Pie. I sauteed onion and carrot first, in olive oil. Next I browned 1 1/4 lb of ground round, added 1c. of crushed tomatoes, diced mushrooms, fresh broccoli & frozen corn. Spices were: onion powder, oregano, garlic, parsley, salt & pepper. It is topped with leftover mashed potatoes, topped with cheese. Put in a 375 degree oven for 10 to 15 minutes.
