Sausage, Poached egg with Hollandaise Sauce on an English Muffin & a sliced tomato

I found the Hollandaise recipe on foodnetwork.com, by Tyler Florence. I poached the eggs in simmering water with a splash of vinegar in the water. The sausage was Swaggety's links. The tomato, Campari.

The top picture is pizza, with a flour tortilla for the crust, topped with sliced tomato, meatball, black olives, Pecorino & Mozzerella,

The Ciabatta bread had a couple of additional ingredients. In addition to the meatball, the sandwich had onion, mushrooms & a creamy cheese blend.

Meatballs

I baked the meatballs at 425 for about 25 min., turning halfway through. After they were browned on all sides I added them to the red sauce in the crockpot.

Hashbrowns, bacon, egg, gravy & biscuit

                 In Pekin, IL. there is a breakfast place called Busy Corner Grill that serves this. It is a layer of hashbrowns with red peppers, bacon, an egg, topped with cream gravy and served with a biscuit. There are several variations on their menu. I thought this sounded good today.  The regular size " John Wayne Breakfast " has 2 eggs....
