Pizza Sticks Appetizer
We used Pillsbury Pizza Crust and coated with olive oil, added sharp white cheddar and Parmesan cheese, bacon (on one of them) Tennessee Pride Sage Sausage, diced onion, oregano, onion powder and crushed red pepper.Fold the crust and place on a preheated Panini grill for about 10 min.Slice into strips.

The Other Favorite Cookie aka Bugle Bombs
Here's the recipe for the Almond Bark cookies:
1 pkg Almond Bark, melted
1 bag Bugles, crushed
1 sm can Mixed Nuts, (take out Brazil nuts...too big)
Melt Almond Bark in microwave. Stir in Bugles & Nuts. Drop by
rounded tablespoonful onto wax paper. Cool. Cookies will set as Almond
Bark cools and hardens...
The Chocolate Cookie Recipe
Chocolate Sandwich Cookies
2 c. all purpose flour
1/3 c. of cocoa
1 t. baking soda
1/4 t. salt
6 T. butter
1 c. sugar
1 egg
1 c. of milk
Combine dry ingredients, whip butter and sugar until fluffy, add egg, then alternate dry ingredients and milk until combined. Drop by rounded teaspoon on a greased cookie sheet. Bake at 425 for about 7 min. Remove to rack to cool.
Filling
1/3 c. of milk
2 T. of flour
1/2 c. of butter softened
1/3 c. of sugar
1 t. of vanilla
Stir 1/3 cup of milk and 2 T. of flour over low heat until it simmers and thickens about 2 min.
Let cool. In the mean time. beat sugar and butter until light and fluffy.add vanilla. After the milk has cooled add to the butter sugar mixture and beat until smooth.
These were the favorites from the previous baking day with Sherri. I found these in one of her cookbooks and the icing reminds me of the red velvet cake icing. I love it! It was a little warm in the picture above so it is really important to let it cool or the icing will weep. Tasted great tho.

Burger at Caspers!
Yesterday, the pit stop for a burger lunch was at Casper's in downtown, Springfield, Missouri. This little Quonset hut is a great place for lunch. I love the atmosphere and the people are so warm and friendly. They serve great burgers, chili, shakes and desserts.

Dressing
The dressing was prepared with dried white bread, corn bread, celery, onion, mushrooms, fresh sage, chicken stock, butter, salt & pepper. Baked at 350 degrees for about 40 min.

Tortilleria Perches
Ok, I had Mexican food, out again...And beyond a shadow of a doubt this place is the best! The food was very well seasoned, hot and delicious. I am so glad that i found this place. It is my new favorite for Mexican food.The top picture is Picadillo, rice and beans. The bottom is Nopales.

El Charro
This was a first visit to El Charro. Both the food and the service were very good. The beer was icy cold. I would definitely go back. This number 3 under combination dinners.

Pork loin Sandwich, Slaw & Potato Salad
I used a dry rub on the pork loin, cooked it in the crock pot, bbq sauce added to the bread. The slaw was made with broccoli, cauliflower, cabbage, craisins, nuts and bacon, with a dressing that has a hint of orange flavor, slightly sweet. Potato salad ingredients were potatoes, celery, sweet onion, mayo, dijon, honey mustard, dill pickle, boiled egg, salt and pepper.

Chicken & Rice
I cooked onion and celery in olive oil, added chicken thighs (with bone and skin, Smart brand), garlic herb seasoning & a can of diced tomatoes with chiles. I cooked until thighs were tender and falling off the bone. I removed them from the pan and let cool. I discarded the bone and fat and added the chicken to the rice. The rice was cooked in the pan juices. I served it with buttered corn.

This is delicious! She uses potatoes, frozen broccoli, cauliflower mix, chicken stock, queso blanco and sharp cheddar. A little bit of half and half, salt and pepper.
