This breakfast was a Scrambled egg topped with Pepper Jack Cheese, Maple Bacon & Arugula, on an onion roll.

Slutty Brownies

Di made these awesome brownies! She found the recipe online and they are called slutty brownies. They are a layer of chocolate cookie dough, a layer of oreos and last a layer of brownie batter. Bake for 30 min in a 350 degree oven.

Chewy and moist, slightly undercooked - I used a couple T. of strong coffee for the liquid in the recipe.

Breakfast Burrito

I made egg, bacon, onion, cheese, potato burritos today. I love the new dicing tool! It made preparation a snap.  I used Pepper & Salt, Emeril's  Essessence as the seasoning. I sliced the potatoes and fried them in hot oil until slightly browned, I placed potatoes on a paper towel lined plate to absorb the excess oil. I then put the potatoes and sliced onion on a cookie sheet and finished in a 375 degree oven. I cooked the eggs in a nonstick skillet until they were a soft scramble, added the cooked bacon and shredded cheese. I put all the ingredients in a Jalapeno Cheddar Tortilla and back in the skillet to crisp the outside. 

Eggplant grilled topped with Parmesan & Garlic Bread

Angelo cooked lunch for us on the grill. It was delicious.. I prefer this to fried eggplant. After he seasoned then grilled the eggplant, he put it on a baking sheet, topped slices with bread crumbs, more spice, olive oil and Parmesan. It baked for just a few more minutes. Yum!
