French Mediterranean Cafe



Last night we went to a fairly new restaurant in Nixa, Missouri. My good friends, Julie and Sherri took me to dinner there! It is a very comfortable and a high quality restaurant, both the food and service are excellent. It is a owned and operated by Al-Rounbaie.
We had Stuffed Grape Leaves for an appetizer, than a fantastic Moroccan Salad with mandarin oranges, dates, and an orange dressing that I love! My main course was a Spicy Shrimp and Chicken dish with Rice.

Root Vegetable and Steak Soup




I had filet left from last night and wanted to use it this morning so I decided to make this soup. I sauteed the celery, onion, garlic, carrot, parsnip, sweet potato, red pepper in olive oil and then added beef stock. I seared the beef tenderloin in a cast iron skillet in peanut oil. I then added mushrooms,  fresh parsley, sage, dried rosemary and a bay leaf. Some more salt and pepper. I also added an additional 16 oz of water.

Beef Tenderloin, Roasted Brusselsprouts, Arugula, green onion, tomato salad and french bread. Various dipping sauces.





We had beef tenderloin, roasted brussel sprouts, shrimp ceviche, arugula salad and french bread, Good wine and Great Friends, what a nice dinner!
The beef we cooked in a fondue pot filled with peanut oil. The brusselsprouts roasted at 400 degrees for about 40 min and then sprinkled with balsamic vinegar and Parmesan cheese.
The shrimp was a simply recipes, recipe. I loved it!

Sergio's Chicken Taco Night



Potato Soup and Turkey Sandwhich with Arugula




I peeled and cubed the potatoes. In a large stainless steel pot, I sauteed onion, garlic and carrot in a small amount of peanut oil. Then added 4 cups of chicken stock and cooked till potatoes where tender. Added one can of evaporated milk and 1/2 to 1  cup of buttermilk, 6 T. of butter, salt and pepper.

Banana Raisin Bread


I found this banana bread recipe on the back of a graham cracker box. I made a couple of changes to the recipe. One change was that I cooked the bananas and then cooled before adding to batter. This bread had good texture and it is not too sweet. It is good with real butter or caramel pecan sauce spread on it.

Oatmeal Cookies


These Oatmeal Cookies both have pecans and Hershey's chocolate bar in them.

I used the Loaded Oatmeal Cookie recipe by Paula Deen as my base. I made a few changes such as no raisins and pecans instead of walnuts.

Pumpkin Pancakes and Maple Bacon for breakfast



The pumpkin pancake recipe is from Allrecipes.com. It is a keeper!

Lindsey's Bread


Lindsey started with a french baguette, then pesto, artichokes, thin sliced tomatoes, Italian cheese blend, salt and pepper. She baked it at 400 degrees for about 20 min. It was delicious!

Back from Vacation


Smoked Cheddar and Pretzel Chips dipped in a sweet hot sauce. This was the first thing that I wanted to make for myself upon my return to the kitchen.

The Crust is super thin, just the way I like it! The picture above is missing black olives, since Stephan does not eat them. Our server did a fantastic job!

Cracked Pepper Bistro

The Cracked Pepper Bistro is absolutely the best! No doubt about it. On my last night of my trip my friends (Gay and Charlie) took me here for dinner. Last but not Least, this was by far my favorite meal! We have eaten at many excellent restaurants in the past couple of weeks and I
appreciate and  have enjoyed each experience. My new favorite food is an appetizer that they name, Mala Insana Napoleon . It is pumpkin seed, panko encrusted eggplant, fried in peanut oil, layered with walnut pesto, goat cheese, and oven roasted tomatoes. It is stacked and then misted with aged balsamic.
The Salad was Stilton Blue Salad. It consisted of Little Gem Lettuce and dry blue cheese dressing. Served with candied walnuts and Asian Pears. with Port Wine reduction.
The Bread Pudding was meant for sharing. It was quite large and every bite delicious! It has a great sauce that you could easily eat more than you really should.  All three of us loved it!
